Yasaki Cheese Grater / Chopper AK90C

The Yasaki AK90C is a commercial cheese grater and chopper handling around 60 kg an hour through a stainless steel grater drum, driven by a direct gear-driven motor with no belts or chains to replace. A feeder handle interlock stops it running unless the handle is down, and a hopper hand-guard grid keeps fingers clear of the drum. Important: Yasaki specify this machine for grating hard cheese only.

The AK90C suits pizzerias, Italian restaurants, delis and production kitchens grating parmesan, pecorino and similar hard cheeses in volume. The limitation is the deciding factor: it is a hard-cheese machine, so mozzarella and other soft or semi-soft cheeses are outside what it is built for.

Installation & delivery

It runs from a standard 10 A power point, so no electrical work is required. Allow 600 mm of bench with clearance above to raise the feeder handle and load the hopper, plus space beneath the discharge for a container. The pan and drum come out for washing, so site it near a sink. At 27 kg it is a one or two-person lift.

Q: What cheese can the AK90C grate?
