The Brullen i26 Pro is a countertop twist soft serve and frozen yoghurt machine with two 12 litre cooled, agitated hoppers and two 2 litre freezing cylinders. This is the air-mix-pump build at 30% to 80% overrun, running a Tecumseh 1.75 HP compressor with Danfoss components from a single 15 A dedicated circuit — two hoppers and a twist without switchboard work.

Q: What is overrun, and why does it matter more than anything else here?
Overrun is the percentage of air whipped into the mix. It sets both the texture and your yield. A gravity-feed machine runs 15-45% overrun and gives a denser, gelato-like product; an air-pump machine runs 40-80% and gives classic light soft serve. The commercial consequence is the yield: at 80% overrun one litre of mix becomes roughly 1.8 litres of finished product, where at 20% it becomes 1.2. If you are comparing a gravity-feed and an air-pump version of the same machine, that is the difference you are actually choosing between.
Q: Is pasteurisation included?
