The Brullen i36 Pro is a gravity-feed soft serve and frozen yoghurt machine serving two flavours plus a twist, rated at 480 cups an hour at 80 g a cup. Installation & delivery

It needs a 15 A outlet — not a standard 10 A point — so an electrician will need to install one if you do not have it. That is still far simpler than the three-phase installations common on machines at this output. At 226 kg and 1,435 mm tall it is a multi-person placement on a floor that can carry it; check the route against the 710 x 900 x 1600 mm packed size and the 256 kg packed weight. The condenser is air cooled, so it needs clear air around it — boxing it into a cabinet will cost you output on the hottest days, which are exactly the days you need it. Allow for daily cleaning: soft serve equipment is a food safety item, and a gravity system still has to come apart.

Q: What does overrun mean and why is 15 to 60 per cent useful?

Overrun is the air whipped into the product as it freezes. At 15 per cent you get a dense, premium, gelato-like serve that costs more per cup in mix; at 60 per cent the product is lighter and the same mix yields far more serves. Being able to set it means you can position your product and control your margin rather than accepting whatever the machine does.

Q: Why do pre-cooled mix tanks matter?

Because mix is a dairy product sitting in a hopper all day. A machine that only refrigerates the freezing cylinder lets the tank warm, which limits how long you can safely hold mix and how much you can load at once.
