The Brullen i91 Pro is a single-flavour countertop soft serve machine rated at 250 to 500 serves per hour. This is the air-pump build running 40% to 80% overrun — lighter product and far more yield per litre than gravity feed — and it is the only i91 Pro build that offers an optional 20 litre mix tank in place of the standard 12 litre. It needs a 15 A dedicated circuit.

Q: What is overrun, and why does it matter more than anything else here?

Overrun is the percentage of air whipped into the mix. It sets both the texture and your yield. A gravity-feed machine runs 15-45% overrun and gives a denser, gelato-like product; an air-pump machine runs 40-80% and gives classic light soft serve. The commercial consequence is the yield: at 80% overrun one litre of mix becomes roughly 1.8 litres of finished product, where at 20% it becomes 1.2. If you are comparing a gravity-feed and an air-pump version of the same machine, that is the difference you are actually choosing between.

Q: Can I get a bigger mix tank?

Our data records a 20 litre tank as an option on this air-pump build, in place of the standard 12 litres. It is not recorded as an option on the gravity-feed version. Q: What electrical supply does it need?

A 15 amp dedicated circuit. Dedicated matters more than the number - the compressor cycles continuously through service and sharing the circuit is how a breaker trips mid-rush.

Q: Does it need plumbing or extra ventilation?

The condenser is air-cooled, so there is no water connection for cooling - but it does need clear airflow around it, and boxing it into a tight cabinet will cost you capacity on a hot day. Our data does not record a ventilation clearance figure for this model, so check the equipment manual or ask us before you build it into joinery.

Q: What is the scraper blade made of and why does that matter?

POM plastic. The blades scrape the frozen layer off the inside of the freezing cylinder thousands of times a day, and the choice of material decides what wears out. Plastic blades wear instead of the cylinder, so the consumable is a cheap replaceable part rather than the machine itself.
