Q: What is overrun, and why does it matter more than anything else here?

Overrun is the percentage of air whipped into the mix. It sets both the texture and your yield. A gravity-feed machine runs 15-45% overrun and gives a denser, gelato-like product; an air-pump machine runs 40-80% and gives classic light soft serve. The commercial consequence is the yield: at 80% overrun one litre of mix becomes roughly 1.8 litres of finished product, where at 20% it becomes 1.2. If you are comparing a gravity-feed and an air-pump version of the same machine, that is the difference you are actually choosing between.

Q: What electrical supply does it need?

A 15 amp dedicated circuit. The 'dedicated' part matters more than the amperage: a soft serve machine's compressor cycles continuously through service, and sharing the circuit with other equipment is how you get a breaker tripping in the middle of a rush.

Q: How does the Pro differ from the standard i91?
