Q: What is overrun, and why does it matter more than anything else here?
Overrun is the percentage of air whipped into the mix. It sets both the texture and your yield. A gravity-feed machine runs 15-45% overrun and gives a denser, gelato-like product; an air-pump machine runs 40-80% and gives classic light soft serve. The commercial consequence is the yield: at 80% overrun one litre of mix becomes roughly 1.8 litres of finished product, where at 20% it becomes 1.2. If you are comparing a gravity-feed and an air-pump version of the same machine, that is the difference you are actually choosing between.
Q: How does it differ from the gravity-feed i91?
Overrun and weight only. This build runs 40-80% overrun against 15-45%, and weighs 112.5 kg against 105 kg. Tank, footprint, output and electrical requirement are identical. The practical difference is texture and yield: lighter product and close to 1.8 litres per litre of mix here, denser product and less yield on gravity feed.
Q: How does it compare to the i91 Pro?
The i91 is narrower (324 mm against 400 mm) and does fewer serves (210-425 an hour against 250-500), but it is deeper and taller. If width is your binding constraint, this is the machine; if throughput is, the Pro is.
Q: What electrical supply does it need?

Q: Does it need plumbing or extra ventilation?
The condenser is air-cooled, so there is no water connection for cooling - but it does need clear airflow around it, and boxing it into a tight cabinet will cost you capacity on a hot day.
