Q: What is overrun, and why does it matter more than anything else here?

Overrun is the percentage of air whipped into the mix. It sets both the texture and your yield. A gravity-feed machine runs 15-45% overrun and gives a denser, gelato-like product; an air-pump machine runs 40-80% and gives classic light soft serve. The commercial consequence is the yield: at 80% overrun one litre of mix becomes roughly 1.8 litres of finished product, where at 20% it becomes 1.2. If you are comparing a gravity-feed and an air-pump version of the same machine, that is the difference you are actually choosing between.

Q: How does it compare to the i91 Pro?

The i91 is narrower (324 mm against 400 mm), lighter (105 kg against 115 kg) and does fewer serves (210-425 an hour against 250-500). But it is also deeper and taller - 783 x 880 mm against 750 x 840 mm - so it is not simply a smaller machine. If bench width is your constraint, the i91 wins; if throughput is, the Pro does.

Q: What electrical supply does it need?

A 15 amp dedicated circuit, the same as the i91 Pro. Dedicated is the operative word: the compressor cycles continuously and a shared circuit is how you get a trip mid-service.

Q: Is there an air pump version?

Yes - the i91 air-pump build runs 40-80% overrun for lighter product and substantially more yield per litre of mix, where this gravity-feed build runs 15-45% for a denser result. Both are in our range.

Q: Does it need plumbing or extra ventilation?

The condenser is air-cooled, so there is no water connection for cooling - but it does need clear airflow around it, and boxing it into a tight cabinet will cost you capacity on a hot day. Our data does not record a ventilation clearance figure for this model, so check the equipment manual or ask us before you build it into joinery.

Q: What is the scraper blade made of and why does that matter?

POM plastic. The blades scrape the frozen layer off the inside of the freezing cylinder thousands of times a day, and the choice of material decides what wears out. Plastic blades wear instead of the cylinder, so the consumable is a cheap replaceable part rather than the machine itself.
