The ConvectMax YXD-8A/15E is a 4-tray bench-top convection oven with press-button steam, built for cafés, bakeries, and back-of-house kitchens that need bakery-grade results without the footprint or cost of a combi oven. Two reversing fans pull heat evenly across four 600 × 400 mm trays, while the press-button steam delivers controlled moisture for pastry, bread, and proteins — so you get the even bake of convection plus the crust development usually reserved for steam-injected ovens.
Why operators choose the YXD-8A/15E
- 4 × 600 × 400 mm trays — GN-compatible bakery tray footprint, covers most café and bakery workloads
- 50–300 °C temperature range — gentle proofing to high-heat roasting, all in one oven
- Two reversing fans — direction alternates through the cycle for even bake, front-to-back and tray-to-tray
- Press-button steam function — on-demand moisture for bread crust and pastry lamination
- Stainless steel cavity with rounded corners — faster cleaning, no food traps
- 120-minute timer with end-of-cycle bell — runs hands-off while you work the rest of the line

Venue suitability
Suited to cafés, bakeries, patisseries, sandwich bars, catering kitchens, and cloud/ghost kitchens where a full combi oven is overkill but a simple convection oven isn't enough (you need steam). Four trays handle roughly 60–80 croissants per cycle, or 4 × sheet-tray roasts.
Installation notes
Requires a 15 A single-phase outlet (not a standard 10 A wall socket). A licensed electrician can confirm or install a 15 A plug for your site — most commercial venues already have one. Bench-mountable; leave 50 mm clearance above the unit and 100 mm at the rear for ventilation.
Frequently asked questions
Q: Does this oven run on standard Australian power? A: It needs a 15 A single-phase outlet (not a standard 10 A wall socket). Total draw is 3.3 kW. A licensed electrician can install or confirm a 15 A plug — most commercial venues will already have one.
Q: How does press-button steam compare to a full combi oven? A: Press-button steam adds controlled moisture to the bake cycle — great for bread crust, laminated pastry, and preventing protein dry-out. A full combi oven adds precise steam percentages, temperature probes, and auto-cleaning, at 3–5× the cost. If you need bakery-grade steam without the combi price tag, the YXD-8A/15E covers the core use cases.
Q: Will my standard baking trays fit? A: The oven fits 4 × 600 × 400 mm trays with 80 mm spacing between levels. Four aluminium trays are included. Most commercial bakery and GN pans in this footprint will drop straight in.
Q: What temperature range can it hold? A: 50 to 300 °C. Low enough for proofing dough, high enough for roasting proteins or browning pastries. A 360 °C hi-limiter provides a safety cutout above operating range.
Q: Is there a way to get even heat across all four trays? A: Yes — two reversing fans alternate airflow direction through the cycle, which evens out hot and cold spots compared to a single-direction fan. This is the same principle used in larger commercial rotating-rack ovens.
Q: What's the warranty? A: 12 months parts and labour — covers components and in-person repair during the warranty window.
