Q: What do the two motors do?
One drives the bowl, one drives the hook, rather than a single motor turning both through a gearbox. Independent drives let each run at its own speed, which is what matters on large batches. The three smallest models in this range do not have it.
Q: How much dough will it make?
Up to 50 kg of flour per batch in a 130 litre bowl. Plan from the flour rating - that is what the drive is rated against, whereas bowl volume only describes what fits.
Q: How heavy is it and can my floor take it?
370 kg empty, before any dough goes in. With a full bowl you are well over half a tonne concentrated in one spot. On an upper floor or a timber floor that is worth checking, and you will need equipment to position it.
Q: Why two speeds?
Slow to bring the ingredients together, fast to develop the gluten - 150 rpm and 200 rpm. On a production machine that control is what lets one mixer handle both enriched and lean doughs.
