The Anvil COA1005 is a bench-top convection oven taking four full-size gastronorm pans or four 600 x 400 mm baking trays, with four shelves supplied as standard. It has manual steam injection — the feature that lets you brown pastry and bread properly rather than drying them — and two industrial heavy-duty reversing fan motors, which is what evens out the bake across a full load. Control over the first phase of a bake. Injecting steam keeps the surface of bread and pastry moist while the product expands, then the dry convection heat browns it.
