Q: Why does plate thickness matter?

It is the single thing that separates a griddle that works from one that frustrates. A 10 mm plate stores heat, so when cold product lands on it the surface temperature barely moves and the food sears. A thin plate drops temperature immediately and the food stews in its own liquid instead.

Q: How big is the actual cooking area?
