Q: Why does plate thickness matter?

It is the single thing that separates a griddle that works from one that frustrates. A 10 mm plate stores heat, so when cold product lands on it the surface temperature barely moves and the food sears. A thin plate drops temperature immediately and the food stews in its own liquid instead.

Q: How big is the actual cooking area?

355 x 420 mm. That is the usable surface, and it is the figure to plan a service around - the 373 mm external width includes the body around the plate.

Q: How does it compare to the FTA0600?
