The Anvil PMA3060 is a 60 quart (approximately 57 litre) gear-driven planetary mixer with a 3 hp motor and four speeds. Its volume guide runs to 27 kg of dough from 18 kg of flour and 12 litres of water — production capacity rather than batch capacity. Q: How much dough will it actually make?

27 kg, from 18 kg of dry flour and 12 litres of water - the manufacturer's own worked example. Work to the flour weight rather than the bowl volume, because dough volume varies with hydration. Across the Anvil range the dough ladder runs 1.3 kg (10 qt), 3 kg (20 qt), 10 kg (40 qt) and 27 kg here.

Q: Why does the bowl dolly matter?

Because a 60-quart bowl full of dough is far beyond a safe lift. The dolly takes the bowl off the machine and moves it, which is the difference between a mixer you can actually unload and one that becomes a bottleneck. It is supplied rather than an accessory.

Q: What electrical work is needed?

It runs on 400 V three phase at 2.25 kW and is supplied without a plug - the manufacturer requires installation by a licensed technician. If three phase is not at your premises, get that priced before ordering; the supply work can cost more than the machine.

Q: Why four speeds rather than three?

A planetary at this size is the versatile choice - it whisks, creams and mixes as well as handling dough. A spiral mixer of comparable capacity develops gluten with less friction heat and is the better dedicated bread machine.
