The Yasaki JDR-520B is a bench dough sheeter with a 500 mm belt width and an 830 mm table, adjustable from 1 to 35 mm thickness through a 40 mm roller opening on large hard chrome rollers. Dough weight capacity is 5 kg. It is built in steel, stainless steel and aluminium, uses a food-grade conveyor belt rather than a cotton one, and has no external switches for flour to get into. It runs from a standard 10 A outlet.
Why operators choose the JDR-520B
- 1 to 35 mm through a 40 mm roller opening — that range covers a thick block down to pastry in one machine, and a 40 mm opening takes a substantial block without pre-flattening it by hand
- Large hard chrome rollers — chrome resists the pitting that makes rollers stick, and larger rollers sheet more gently in fewer passes
- Food-grade conveyor belt, not cotton — a cotton belt absorbs fat and frays; a food-grade belt cleans properly and lasts
- No external switches — switch gear on the outside of a sheeter is where flour gets in and causes failures - this design removes the entry point
- Rollers lock internally with no ratchet — the usual ratchet mechanism wears and can catch an operator's knuckles; an internal lock does neither
- Scraper assemblies remove easily and cost little to replace — the part that wears is the part designed to be swapped, at low cost
- Access to the conveyor drive rollers in the folded position — you can actually clean where dough builds up, which most sheeters make difficult
- Safety guards with internal safety switching — the guard is interlocked rather than decorative
- Folds down for storage — 2080 mm of table folds to a 720 mm packed width, so it does not permanently own that bench length

Venue suitability
The JDR-520B suits bakeries, patisseries, pizzerias and pastry kitchens sheeting laminated doughs, pastry and pizza bases in 5 kg batches. It is a bench machine, but at 150 kg and 2080 mm extended it wants a permanent position with the table folded between uses.

Installation & delivery
It runs from a standard 10 A power point, so no electrical work is required. Extended it needs 2080 mm of length, folding to a 720 mm packed width, so plan the bench run for the working dimension not the stored one. At 150 kg it is a multi-person lift onto the bench. Cleaning is not optional on this machine: dough left to build up on the rollers creates a bump under the sheeting belt, which can catch the scrapers and rip the belt. Clean the rollers down each day — the folded position is designed to give you access to do it.
Frequently asked questions
Q: What thickness range does the JDR-520B sheet?
1 to 35 mm, through a 40 mm roller opening on large hard chrome rollers, so it takes a thick block and brings it down to pastry without you flattening it by hand first.
Q: How much dough can it take at once?
The dough weight capacity is 5 kg.
Q: What maintenance does it actually need?
Clean the rollers down daily. The manufacturer is explicit that poor cleaning lets dough build up on the rollers, which creates a bump under the sheeting belt that can catch on the scrapers and tear it. The machine folds specifically to give you access to the conveyor drive rollers, so use it.
Q: Why does the belt material matter?
It uses a food-grade conveyor belt rather than a cotton one. Cotton absorbs fat, frays and is hard to clean properly - a food-grade belt washes down and lasts.
Q: Does it need special wiring?
No. It draws 375 W at 240 V and runs from a standard 10 A power point.
Q: What warranty does the JDR-520B come with?
Covered for 2 years on parts and labour. Terms vary by product — see our warranty information page for full details.
