The Matador HSM-120D is a combined slicing and mincing machine that also does strip cutting — three meat-processing jobs from one motor and one footprint. It comes with a 3.5 mm slicer blade (a 5 mm blade is available), 5 mm and 8 mm mincer plates and a #22 mincer head. The structure is food-grade stainless steel with an integrated safety guard, it runs on 1,100 W from a standard outlet, and at 110.6 kg it sits on heavy-duty castors.
Why operators choose the HSM-120D
- Three functions, one machine — slicing, mincing and strip cutting. For a butchery bench that is short on space, replacing two machines with one is the whole argument
- Plates and a blade included — a 3.5 mm slicer blade plus 5 mm and 8 mm mincer plates come with it - fine and coarse mince covered, and a 5 mm slicer blade is available if you need thicker slices
- #22 mincer head — the head size determines which plates and knives fit. Standardise across your kitchen where you can so consumables are interchangeable
- Integrated safety guard — on a machine combining a slicer blade and a mincer auger, the guard is what makes it operable by staff rather than by specialists
- Food-grade stainless steel structure — the whole structure, not just the food-contact parts - it takes daily cleaning and heavy use
- Heavy-duty castors — 110.6 kg that still moves. You can clean behind and under it, which on meat equipment is not optional
- 1,100 W on a standard 10 A outlet — real capability without an electrician - it draws about 4.6 A
- Switch functions without changing machines — the manufacturer's point, and the practical one: the changeover is between attachments, not between benches

Venue suitability
The HSM-120D suits butchers, smallgoods producers, delis and restaurants doing their own meat processing — particularly where bench space will not take a separate slicer and mincer. It is the largest Matador meat machine we carry, well above the TC8 and AK32MG mincers in both capability and footprint.

Installation & delivery
It runs from a standard 10 A power point, so no electrical work is required. At 1,100 W it draws about 4.6 A, so it shares a circuit comfortably. At 110.6 kg it is a multi-person placement, though it arrives on heavy-duty castors so it rolls once it is down. Allow 756 x 571 mm of floor or bench plus clearance in front for product and a receiving tray, and room to work at the slicer. Our recorded packed dimensions appear to have width and depth transposed against the machine's own figures, so confirm freight dimensions with our team rather than working from this page.
Frequently asked questions
Q: What does it come with?
A 3.5 mm slicer blade, 5 mm and 8 mm mincer plates, and a #22 mincer head. That covers fine and coarse mince and a standard slice thickness out of the box. A 5 mm slicer blade is available separately if you want thicker slices.
Q: Can it really replace a separate slicer and mincer?
For most butchery and kitchen work, yes - it slices, minces and strip cuts, and you change function by changing the attachment rather than moving to another machine. Where it will not replace a dedicated slicer is high-volume continuous slicing, where a purpose-built slicer's throughput and blade size win.
Q: What is a #22 head and does it matter?
It is the standard sizing convention for mincer bodies, and it determines which mesh plates and knives fit. It matters when you buy consumables - if the rest of your kitchen runs a different head size, your plates and knives will not interchange.
Q: How does it compare with the TC8 and AK32MG mincers?
Scale and scope. The TC8 (#8 head, 80 kg/h) and AK32MG (#32 head, 200 kg/h) are dedicated bench mincers. The HSM-120D is a larger multi-function machine at 110.6 kg that slices and strip cuts as well as minces. If you only need mince, one of the dedicated machines is less money and less bench.
Q: Does it need special wiring?
No. 1,100 W at 240 V from a standard 10 A power point.
Q: What warranty does the HSM-120D come with?
Covered for 1 year parts and labour. Terms vary by product — see our warranty information page for full details.
