The Mecnosud SMM1060 is a 100 litre bakery spiral mixer producing 60 kg of finished dough from 40 kg of flour. Its defining feature is separate motors for the bowl and the spiral — two independent drives, each with its own timer — which is what makes pulse rotation of the bowl and a reversible bowl possible. It is a production machine: three phase, supplied without a plug, and it requires a minimum water-to-flour ratio of 50%.

Q: What difference do separate bowl and spiral motors make?

Independence. With one motor and a gearbox the bowl and the spiral turn in a fixed relationship. With separate motors each runs at its own speed and direction and each has its own timer - which is what makes pulse rotation and a reversible bowl possible. On a batch this size those are unloading and cleaning features as much as mixing ones.

Q: How do you get the dough out?

That is the real question at this capacity. The bowl reverses and can be pulsed in steps rather than run continuously, so you can work the dough to where you can reach it instead of chasing it round a moving bowl.

Q: How does it compare to the 80 kg model?

The SMM1080 takes 50 kg of flour into a 130 litre bowl for 80 kg of dough, against 40 kg and 100 litres here. Both have the same dual-motor design, the same reversible pulsing bowl and the same three-phase requirement; the 80 kg model simply has larger motors (3/5.2 kW spiral, 0.75 kW bowl against 1.5/3 and 0.55 here).

Q: What is the minimum hydration?

50% water to flour. A drier dough than that is stiffer than the drive is rated for, and on a machine this size overloading is an expensive mistake.
