The Mecnosud SMM1080 is a 130 litre bakery spiral mixer producing 80 kg of finished dough from 50 kg of flour. Its defining feature is separate motors for the bowl and the spiral — two independent drives, each with its own timer — which is what makes pulse rotation of the bowl and a reversible bowl possible. It is a production machine: three phase, supplied without a plug, and it requires a minimum water-to-flour ratio of 50%.

Why operators choose the ICE-SMM1080

  • 80 kg of finished dough from 50 kg of flour — two and a half bags of flour a batch - a genuine production machine
  • Separate motors for the bowl and the spiral — not one motor and a gearbox but two independent drives. That is what allows the bowl to be run on its own for unloading, and it is the defining difference between this class of machine and the single-motor models below it
  • Dual automatic timers — one per drive, so the machine runs its own programme rather than needing someone at the controls
  • Pulse rotation of the bowl — jog the bowl in steps to unload and clean rather than running it continuously. On a bowl this size that is the difference between reaching the dough and fighting it
  • Reversible bowl — the bowl runs both directions, which is an unloading and cleaning feature as much as a mixing one
  • Two speeds — slow to combine, fast to develop
  • Stainless steel safety guard and head plate cover — both the guard and the plate above the spiral are stainless
  • Minimum water-to-flour ratio of 50% — a stated floor, not a guideline - a drier dough is stiffer than the drive is rated for

Venue suitability

The SMM1080 suits production bakeries and high-volume pizzerias mixing 50 kg flour batches. At this size the question is not whether the machine can mix the dough but how the dough gets out of it, which is why the pulse rotation and reversible bowl matter as much as the capacity figure.

Installation & delivery

This is a 400 V three-phase machine supplied without a plug, and the manufacturer requires installation by a qualified electrician. If three phase is not already at your premises, price that work before committing — it can exceed the cost of the machine. The spiral motor is 3/5.2 kW with a separate 0.75 kW bowl motor. Dimensions are recorded width x height x depth: 730 x 1460 x 1305 mm. Our data records no weight for this model, which is worth confirming before any upper-floor placement.

Frequently asked questions

Q: What difference do separate bowl and spiral motors make?

Independence. With one motor and a gearbox the bowl and the spiral turn in a fixed relationship. With separate motors each runs at its own speed and direction and each has its own timer - which is what makes pulse rotation and a reversible bowl possible. On a batch this size those are unloading and cleaning features as much as mixing ones.

Q: How do you get the dough out?

That is the real question at this capacity. The bowl reverses and can be pulsed in steps rather than run continuously, so you can work the dough to where you can reach it instead of chasing it round a moving bowl.

Q: What hydration does it need?

Our data gives two figures that do not quite agree: one line states a minimum water-to-flour ratio of 50%, another says it is suitable for dough with hydration of 48% or more. Both come from the same source. We have published the more conservative 50% figure because staying above it satisfies both readings, but if you are working deliberately close to that boundary, ask us to confirm the true minimum with the supplier rather than relying on either number.

Q: How does it compare to the 60 kg model?

The SMM1060 takes 40 kg of flour into a 100 litre bowl for 60 kg of dough. This model takes 50 kg into 130 litres for 80 kg, with larger motors (3/5.2 kW spiral and 0.75 kW bowl against 1.5/3 and 0.55). The design is otherwise the same - dual motors, dual timers, reversible pulsing bowl, three phase.

Q: What electrical supply does it need?

400 V three phase, supplied without a plug, installed by a qualified electrician. The spiral motor is 3/5.2 kW and the bowl motor 0.75 kW. If you do not already have three phase, get the installation priced before you order.

Q: What is the minimum hydration?

50% water to flour. A drier dough than that is stiffer than the drive is rated for, and on a machine this size overloading is an expensive mistake.
