The Mecnosud BDM0030 presses, cuts and rounds 30 buns in one cycle, at 40 g to 135 g per ball from a chamber holding up to 4 kg. It is supplied with three food-grade PETG plates and stainless steel knives. It is a three-phase machine supplied without a plug.

The load is modest at 0.75 kW; the supply type is the issue, so price three-phase work before ordering if you do not have it. Dimensions are recorded width x depth x height on this model — 604 mm wide, 605 mm deep and 1,970 mm tall. That height is the figure to check against doorways and ceilings; note the axis order differs from most Mecnosud machines, which record width x height x depth. Site it near a wash-down point so the knives and plates are actually cleaned. Our data records no weight.

Thirty at a time, from 40 g to 135 g each. The division count is fixed at 30 - the finished ball weight depends on how much dough you charge, up to the 4 kg chamber maximum. Thirty balls at 135 g is 4.05 kg, so the chamber is sized to exactly that job.

Q: How does it compare to the 15-division BDM0015A?

They cover different bun sizes rather than different volumes. This model makes 30 balls at 40 g to 135 g from a 4 kg charge; the BDM0015A makes 15 balls at 150 g to 350 g from up to 5.25 kg. If you make dinner rolls, this is the machine; if you make large buns or burger buns, that one is.

Q: Does it round the buns as well as cut them?
