The Mecnosud SMF0080 is a forked mixer with a 93 litre bowl, producing 80 kg of finished dough from 50 kg of dry flour (2 bags). A forked mixer uses a fork-shaped tool that lifts and folds the dough rather than a spiral hook driving it round the bowl. It has a stainless steel frame with all rotating parts on ball bearings, and requires a minimum water-to-flour ratio of 50%. It is three phase and two speed.
