The Mecnosud SMM9944 is a 50 litre spiral mixer producing 38 kg of finished dough from 25 kg of flour, with a fixed head and fixed bowl. Bowl, hook and shaft are stainless steel, the bowl turns at 10 rpm against a 100 rpm spiral, and it requires a minimum water-to-flour ratio of 50%. It runs single phase at 1.1 kW.

Q: What is the minimum hydration?

50% water to flour. That is a floor rather than a recommendation: a drier dough is stiffer than the machine is rated to drive, and overloading a spiral mixer is how the drive gets damaged. Nearly every Mecnosud spiral records the same figure.

Q: What do the two speeds in the specifications mean?

They are not two settings you choose between - they are the bowl and the tool. The bowl turns at 10 rpm while the spiral turns at 100 rpm, and that 10:1 difference is what folds the dough through itself instead of dragging it round the bowl.

Q: What makes this the economy model?

Two things, and both are worth knowing. It makes the same 38 kg of dough as the SMM0044 but from a 1.1 kW motor where that model has 1.5 kW, and its head and bowl are fixed where the SMM0044's head tilts and its bowl comes out. If the machine will run batch after batch all day, the larger motor and the easier unload are what you are paying for.
