The Mecnosud SMM0005 is the smallest spiral mixer in the Mecnosud range — a 7 litre bowl producing 5 kg of finished dough from 3 kg of flour. It has a fixed head and fixed bowl, with bowl, hook, shaft and safety guard all in stainless steel, and runs single phase, single speed at 370 W from a standard outlet.

Why operators choose the ICE-SMM0005

  • 3 kg of flour per batch — a genuinely small machine - roughly four or five loaves' worth. It exists for venues that want proper spiral mixing at a scale where a planetary mixer would normally be the default
  • Fixed head and fixed bowl — the simplest configuration in the range. Nothing tilts and the bowl does not come out, which means fewer moving parts and a more awkward unload
  • Bowl, hook and shaft all stainless steel — the three parts in contact with dough. Stainless on all three is what survives daily wash-down

Installation & delivery

Plugs into a standard outlet — 370 W is about 1.5 A, so no electrical work and it will share a circuit. Dimensions are recorded width x depth x height on this model: 600 mm wide, 340 mm deep, 600 mm tall. Note the axis order differs from most other Mecnosud machines, which record width x height x depth. Our data records no weight, and unlike the larger models in the range it records no castors and no timer for this machine.

Frequently asked questions

Q: How much dough will it actually make?

5 kg of finished dough from 3 kg of flour, in a 7 litre bowl. That is roughly four or five loaves, or enough for a small pizza service. If you need more, the next model in the range takes 10 kg of flour into a 20 litre bowl.

Q: Why choose a spiral mixer this small over a planetary mixer?

They knead differently. A spiral hook works the dough against a rotating bowl and develops gluten with less heat than a planetary mixer beating it; that is why bakeries use spirals for bread. At this size a planetary is the usual default, so this machine exists for people who want spiral kneading at a small scale.

Q: Does the bowl come out?

No. Both the head and the bowl are fixed on this model, which is the simplest arrangement in the range - fewer moving parts, but you lift the dough out rather than removing the bowl. The tilting-head models with removable bowls start at 15 kg.

Q: What electrical supply does it need?

A standard outlet. At 370 W it draws about 1.5 amps, so there is no electrical work and it will happily share a circuit.

Q: Is there a minimum hydration for this machine?

Our data does not record one for this model, although every larger spiral mixer in the Mecnosud range specifies a minimum water-to-flour ratio of 50%. We have not assumed the same figure applies here - if you are planning a stiff, low-hydration dough, ask us to confirm with the supplier first.
