The Mecnosud SMM9960 is a 75 litre fixed-head spiral mixer rated for 60 kg of finished dough from 40 kg of dry flour. It runs two speeds — bowl 12 or 24 rpm against a tool at 68 or 140 rpm — and has a minimum water-to-flour ratio of 50 per cent. Note the format: fixed head, fixed bowl, so the dough comes out of the bowl rather than the bowl coming off the machine.

Installation & delivery
This is a three-phase machine supplied without a plug, and the manufacturer requires installation by a qualified electrician. If three phase is not already at your premises, price that work before committing — it can exceed the cost of the machine. The motor is two-speed at 2.6 and 3.4 kW on a 400 V supply. It arrives on castors with two front lockable levelling feet, so roll it in, level it and lock it. Check your recipe against the 50 per cent minimum hydration before ordering. Because the bowl is fixed, plan the unloading route and bench height — you will be lifting dough out by hand every batch. Our data records no weight for this model.
Frequently asked questions
Q: What does fixed head and fixed bowl mean in practice?
The head does not tilt back and the bowl does not come off the machine. Everything is rigid, which is mechanically simpler and generally more durable - but at the end of every batch you lift 60 kg of dough out of a fixed bowl by hand. The SMM1044 in the same range has a tilting head and removable bowl at 50 litres. Bigger batch, more work unloading, or smaller batch and easier unloading.
Q: How much dough will it make?
60 kg of finished product from a maximum 40 kg of dry flour in a 75 litre bowl. Plan on the flour weight - it is the figure the machine is actually rated to.
Q: What is the minimum hydration and why does it matter?
50 per cent water to flour, stated by the manufacturer. Drier dough is stiffer and puts far more load on the spiral, shaft and motor than the machine is designed for. If you work with low-hydration doughs, check with our team before ordering.
Q: What do the two speeds do?
Low speed - bowl 12 rpm, tool 68 rpm - incorporates flour and water without throwing dry flour. High speed - 24 and 140 rpm - develops the gluten once the dough has come together. Single-speed machines compromise between the two, which usually means a longer mix and a warmer dough.
