The Mecnosud SMM0025 is a 33 litre spiral mixer producing 20 kg of finished dough from 12.5 kg of flour, with a tilting head and removable bowl. Bowl, hook and shaft are stainless steel, the bowl turns at 10 rpm against a 100 rpm spiral, and it requires a minimum water-to-flour ratio of 50%. It runs single phase at 1.1 kW.
Why operators choose the ICE-SMM0025
- Tilting head and removable bowl — the head lifts clear and the bowl lifts out, so the dough leaves with the bowl instead of being scooped over a fixed rim - and both parts clean properly
- 20 kg of finished dough from 12.5 kg of flour — the same capacity as the fixed-head SMM9925 in this range; the difference between them is access, not output
- Bowl, hook and shaft all stainless steel — the three parts in contact with dough. Stainless on all three is what survives daily wash-down
- Bowl 10 rpm, spiral 100 rpm — the two speeds quoted are the bowl and the tool, not two settings. A 10:1 ratio between them is what folds the dough through itself rather than dragging it round
- Minimum water-to-flour ratio of 50% — a stated floor, not a guideline - a drier dough is stiffer than the drive is rated for
- Supplied with castors — roll it out to clean behind rather than leaving a gap nobody reaches

Venue suitability
The SMM0025 suits pizzerias and bakeries running 12.5 kg flour batches several times a day, where the tilting head earns its cost in changeover time. If the machine will run one batch a day, the fixed-head SMM9925 is the same capacity for less mechanism.

Installation & delivery
Single phase at 1.1 kW — roughly 4.6 A, so it runs from a standard supply with no three-phase work. Dimensions are recorded width x height x depth: 770 x 790 x 430 mm. Our data records no weight for this model. It is supplied on castors, so leave room to roll it out for cleaning.

Frequently asked questions
Q: How much dough will it make?
20 kg of finished dough from 12.5 kg of flour, in a 33 litre bowl. Scale your recipe against the flour figure - that is the charge the drive is rated for.
Q: What is the minimum hydration?
50% water to flour. That is a floor rather than a recommendation: a drier dough is stiffer than the machine is rated to drive, and overloading a spiral mixer is how the drive gets damaged. Nearly every Mecnosud spiral records the same figure.
Q: What do the two speeds in the specifications mean?
They are not two settings you choose between - they are the bowl and the tool. The bowl turns at 10 rpm while the spiral turns at 100 rpm, and that 10:1 difference is what folds the dough through itself instead of dragging it round the bowl.
Q: How does this compare to the SMM9925?
Capacity is identical - 20 kg of finished dough from 12.5 kg of flour, a 33 litre bowl and the same 1.1 kW single-phase motor. The difference is the head: this one tilts and its bowl is removable, the SMM9925's are both fixed. If the machine runs several batches a day the tilting head saves real time; if it runs once a day the fixed head is simpler and more rigid.
Q: What electrical supply does it need?
Single phase at 1.1 kW, roughly 4.6 amps, from a standard supply. No three-phase installation is required on this model.
