The Mecnosud SMM1044 is a 50 litre spiral mixer with a tilting head and a removable bowl, rated for 38 kg of finished dough from 25 kg of dry flour. It is a two-speed machine — bowl 10 or 20 rpm against a spiral at 100 or 200 rpm — which is the feature that separates it from a single-speed mixer: slow to incorporate, fast to develop. It has a minimum water-to-flour ratio of 50 per cent, runs on three-phase supply, and is supplied with castors.

Installation & delivery

This is a three-phase machine, it arrives without a plug, and the manufacturer states it must be installed by a qualified electrician. The motor is two-speed at 1.5 and 2.2 kW on a 400 V supply. If three phase is not already at your premises, price that work before committing — it can exceed the cost of the machine. It arrives on castors so placement is a matter of rolling it in; allow clearance behind for the head to tilt and above for loading. Frequently asked questions

Q: What does the two-speed function give me?

Control over two different jobs. Low speed - bowl 10 rpm, spiral 100 rpm - incorporates flour and water without throwing dry flour out of the bowl. High speed - 20 and 200 rpm - develops the gluten once the dough has come together. A single-speed mixer has to compromise between the two, which usually means a longer mix and a warmer dough.

Q: What is the minimum water to flour ratio and why does it matter?

50 per cent, stated by the manufacturer. A drier dough is stiffer and puts substantially more load on the spiral, the shaft and the motor than the machine is rated for. If you work with low-hydration doughs, check with our team before ordering - this is an operating limit, not a recommendation.
