The Mecnosud SMM0044 is a 50 litre spiral mixer producing 38 kg of finished dough from 25 kg of flour, with a tilting head and removable bowl. Bowl, hook and shaft are stainless steel, the bowl turns at 10 rpm against a 100 rpm spiral, and it requires a minimum water-to-flour ratio of 50%. It runs single phase at 1.5 kW.

50% water to flour. That is a floor rather than a recommendation: a drier dough is stiffer than the machine is rated to drive, and overloading a spiral mixer is how the drive gets damaged. Nearly every Mecnosud spiral records the same figure.
