The Prismafood SFR40 is a 40 litre tilt-head spiral mixer rated for 35 kg of dough from a maximum 21.5 kg of flour and 10.75 kg of water. Those two figures matter more than the bowl volume: they are the manufacturer's actual load limit, and overloading the machine or running it at the wrong speed will void the warranty. The bowl turns at 10 rpm against a spiral arm at 120 rpm, and it draws only 1.1 kW from a standard outlet.

Why operators choose the SFR40

Q: What exactly voids the warranty?

The manufacturer states that overloading the machine and/or using the incorrect speed can cause damage and will void the warranty. In practice that means staying within 21.5 kg of flour and 10.75 kg of water per batch, and using the correct speed for the dough you are making. Put the flour weight on your recipe card - this is the single most common way a spiral mixer is damaged.

Q: How much dough will it actually make?

Q: Why a spiral mixer rather than a planetary?

Dough. A spiral turns the bowl slowly against a fast spiral hook, developing gluten with less friction heat than a planetary mixer generates. Heat in dough shortens and complicates the prove. A planetary is the more versatile machine across a menu; a spiral is the better machine for bread and pizza specifically.
