IWOK makes free-standing commercial induction woks for Asian restaurants, takeaways and high-volume stir-fry kitchens, along with the induction-compatible wok pan that suits them. Commercial Kitchen Appliances carries the IWOK range.
Induction wok units
The IWOK-1 is a free-standing induction wok with one wok ring rated at 15 kW, and the IWOK-2 has two wok rings at 15 kW each, 30 kW in total. Both run on a 415 V three-phase supply and have a 5 mm stainless cooking deck. Being free-standing, they replace a gas wok range in the line without a separate stand.
Why induction for wok cooking?
Induction puts the heat into the pan rather than the room. There is no flame and far less escaping heat than a gas wok burner, which makes the kitchen cooler and the cooking line more comfortable to work. There is also no gas connection to install, though three-phase power is needed instead.
The pan matters
Induction only heats a pan with a magnetic base, so a traditional carbon-steel or aluminium wok will not work on an induction ring. The IWOK IW-WOK50 is a 500 mm wok made specifically for the IWOK-1 and IWOK-2. Its base is a three-layer clad construction with a magnetic 430 stainless outer layer, which is the layer induction couples to, and a 304 stainless interior as the food-contact surface. If you replace the wok, choose another induction-compatible pan rather than a standard wok.
Planning an induction wok installation
A 15 kW or 30 kW three-phase appliance needs an electrician and, in many buildings, switchboard capacity checked before installation. Plan the electrical work early, alongside extraction above the wok line, which is still needed for steam, smoke and cooking fumes even without a flame. Check the unit's footprint against the space your current wok range occupies.

Rings. One ring on the IWOK-1, two on the IWOK-2.
-
Power. Both models need a 415 V three-phase supply.
-
Pans. Use a magnetic-based wok such as the IW-WOK50.

Frequently asked questions
How powerful are IWOK induction woks?
The IWOK-1 has one 15 kW ring and the IWOK-2 has two 15 kW rings, 30 kW in total.
Do IWOK induction woks need three-phase power?
Yes. Both models run on a 415 V three-phase supply.
Can I use a normal wok on an induction wok?
No. Induction only heats a pan with a magnetic base. Use an induction-compatible wok such as the IW-WOK50.
Which units does the IW-WOK50 fit?
The IW-WOK50 500 mm wok is made for the IWOK-1 and IWOK-2.
Does an induction wok still need extraction?
Yes. Even without a flame, wok cooking produces steam, smoke and fumes, so plan extraction above the line.
