The BakerMax MPR-18 is a retarder proofer cabinet that automatically switches between refrigeration and proofing across a range of -5 to +60 °C — so dough can be held overnight and then brought up to prove without anyone touching it. It takes 18 layers of 400 x 600 mm bakery pans (trays not included), and humidifies with an integrated water tank that boils to produce steam rather than a spray. It runs from a standard 10 A outlet.

It rolls on heavy-duty lockable castors. The humidification tank needs filling, so site it within reach of water. Order 400 x 600 mm bakery pans separately — trays are not included.

Q: What does a retarder proofer actually do for me?
