The Baker Max ME2-1D is a single-deck electric bakery oven taking two 600 x 400 mm trays, with a digital micro-computer temperature controller and an 860 x 623 x 215 mm chamber. This is the non-steam model, rated 6.6 kW. It is stackable up to 3 decks and sits on heavy-duty castors. It is a 415 V three-phase machine.

Q: Can I add steam later?

The description on this oven refers to an 'optional unit for steam cooking', and Baker Max lists separate steam models drawing 8.6 kW against this oven's 6.6 kW - that 2 kW difference is the steam system. Whether it can be retrofitted to this unit is not something our records cover, so ask us and we will check with the supplier. If you know you want steam, the steam model is the straightforward answer.
Q: What does the rear smoke baffle actually do?
It stops the chamber temperature falling away sharply, particularly when the door is opened. On a deck oven that is loaded and unloaded repeatedly through a bake, how quickly the oven recovers between loads is most of what determines whether the last tray matches the first.
Q: Are trays included?
No. The oven takes two 600 x 400 mm trays per deck - the European bakery standard - but they are not supplied. Order them with the oven if you do not already run that size.
