Glasswashers are rated in racks per hour, derived from cycle time. A machine with a 120-second cycle theoretically delivers 30 racks per hour; a 90-second cycle delivers 40.
To size properly:
- Estimate glasses used in your busiest hour.
- Divide by glasses per rack to get racks per hour needed.
- Add margin — the rated figure assumes continuous loading and unloading with no gaps, which never happens in a real bar.
Most machines offer multiple cycle lengths. A short cycle for lightly soiled glasses during peak, a longer one for heavier soil. Being able to run a fast cycle when the bar is three deep is genuinely valuable.
