Jasper makes gas Asian cooking equipment and wet hot food displays: wok burners with duckbill or chimney burners, a stock pot boiler, a yum cha steamer and bain marie displays for takeaways and buffets. Commercial Kitchen Appliances carries the Jasper range.
Gas wok burners: duckbill or chimney?
Jasper wok burners come with two burner designs, and the choice decides how the heat reaches the pan. A chimney burner drives heat straight up into the base of a round-bottomed wok in a tight column, the concentrated heat that gives wok hei. A duckbill burner spreads the flame around the wok base rather than pointing it at the centre, heating the sides evenly for tossing, and suits flat-bottomed pans too.
-
Single wok: JA-1CB (chimney) and JA-1DB (duckbill), 600 mm wide; the JA-1CB weighs 79 kg.
-
Double wok: JA-2CB (chimney) and JA-2DB (duckbill), 1200 mm wide, taking two woks at once; the JA-2DB weighs 125 kg.
-
Triple wok: JA-3CB (chimney) and JA-3DB (duckbill), 1800 mm wide, three wok stations; both weigh 180 kg.
All stand 1180 mm high, the working height that lines up with a run of benches, and 900 mm deep. They are fixed installations that must be connected by a licensed gasfitter. The JA-2CB runs on natural gas with an LPG variant available; check each listing for the gas type.
Stock pot boiler and yum cha steamer
The JA-SPB is a gas stock pot boiler with an 18-jet duckbill burner, in natural gas or LPG. Eighteen jets across a wide burner spread the heat across the flat base of a large stock pot, rather than burning the base while the top stays cold. The JA-NC is a gas multi-function cooker and yum cha steamer for boiling, steaming and simmering in one 600 mm wide unit, weighing 83 kg, which replaces separate appliances in a tight yum cha kitchen.
Wet hot food displays
Jasper BM wet hot food displays hold cooked food at serving temperature behind square glass, with sliding rear doors for serving and replenishing, in four widths: the BM4 at 740 mm, BM6 at 1070 mm, BM8 at 1400 mm and BM10 at 1730 mm, plus the BM12 at 2060 mm. The model number is not the bay count: the BM4 is a 2-bay unit and the BM12 a 6-bay unit. Pans are not included with the BM4 and BM12, and those two listings record no electrical supply, so confirm the power requirement with us before ordering.
