Tyrone is a range of commercial mixers and dough equipment: planetary mixers for batters, creams and general mixing, fixed-head spiral mixers for bread and pizza dough, and a heated dough press. Commercial Kitchen Appliances carries the Tyrone range for bakeries, pizzerias, cafes and restaurants.
Planetary mixers
Tyrone heavy-duty planetary mixers have 10 variable speeds on a belt drive. The smaller machines plug into a standard 10 A outlet: the B10GX (10 litres, 750 W), the B20GX (20 litres, 1,000 W) and the B40GX (40 litres, 1,500 W), which is notable for a 40 litre machine. At 60 litres, the B60GX/S is the single-phase build at 2,500 W, and the B60GX is the same size; check its listing for the supply. The B80GX is the largest in the range at 80 litres, on a 415 V three-phase supply.
Spiral mixers
A spiral mixer kneads dough with a spiral hook while the bowl turns, developing gluten without overheating the dough, which is why bakeries and pizzerias use them. Tyrone's fixed-head spiral mixers run from the 23 litre SCP23 and 34 litre SCP34 up through the SCP45, which has a 30 kg kneading capacity and runs at 2.6 kW on 15 A, to the SCP55 (38 kg kneading capacity) and SCP66, both on a 415 V three-phase supply at 3.3 kW. Tyrone records a hydration range of 50 to 57% for its spiral mixers, so check the listing if you work with wetter doughs.
Dough press
The DP-18S is a clamshell round dough press with an 18 inch non-stick aluminium plate. Its upper plate heats, which helps dough relax and hold its shape as it is pressed into a base. It runs at 3,300 W on a 15 A outlet.
Planetary or spiral?
A planetary mixer is the all-rounder: it whips, beats and mixes with interchangeable attachments. A spiral mixer is built for dough, and handles heavy, stiff doughs in volume better than a planetary of the same bowl size. Many bakeries run one of each.
